Vegan Dining Continues to Grow in Las Vegas With This Latest Announcement

Get ready, Las Vegas. Vegan dining continues to grow in Las Vegas in 2018 with the upcoming opening of another all-vegan restaurant in Las Vegas — Blinders Burgers and Brunch. The announcement comes on the heels of rapid vegan growth in Las Vegas, including Border Grill at Mandalay Bay and CRAFTKitchen announcing vegan menus, and the mid-March opening of The Modern Vegan.

Blinders and Burgers is set to open late April. And, for those who have been begging for a hip vegan spot in Northwest Las Vegas, it’s in your neighborhood.

Blinders Burgers and Brunch, owned by Shantell Connor, takes over Vege-Way North’s location (which remains open while the transition is underway). Connor, who has a background in medicine has seen first-hand the effects of embracing a vegan diet.

“I see plant food as medicine,” she explains. “I’ve seen labs drops significantly and reverse issues for those suffering from high cholesterol, diabetes and some cancers.”

Blinders is currently working with their chefs to create the burger-heavy menu featuring non-GMO ingredients and has partnered locally with new-kid-on-the-block No Butcher, which specializes in making plant-based meats to create specialty (and special items) like their pulled pork sandwich — and is the first restaurant in the Valley to offer their products, and Virgin Cheese. They’re also bringing in the well-known Herbivorous Butcher from Minneapolis and the Impossible Burger.

The restaurant plans on serving up vegan draft beers, draft kombucha and more beverages like pure cane soda, and will also feature a grab-and-go breakfast and weekend champagne brunch.

“It’s the place vegans can bring their carnivore friends to eat,” says Connor of Blinders. “Basically, it’s the place to go for everyone to enjoy amazing plant-based foods that taste amazing. I’d love people to leave saying ‘I can’t believe that was vegan … and break down that barrier. That’s why we chose the name ‘Blinders.”
