We’ve talked about Panacea a lot lately. It was named in our Best of Las Vegas Vegan Dining Guide. We’ve written about it in Veg News. We sing its praises when we can because — guys — some of the dishes there are the best we’ve ever had. Seriously.
This Boca Park fast-casual vegan restaurant (minus the locally sourced honey they have for smoothies) serves breakfast, lunch and dinner. While it’s still in its menu refinement phase (they drop in new dishes every so often), what we dig the most is the Ultimate Burger. It’s the healthy version of the junk food, meat patty served at In N Out, but so. much. better. Here, they use buckwheat, faro, lentils and quinoa to create a perfect patty, then top it with onions (caramelized and agrodulce), dill pickles, chipotle ketchup and ginger mustard. The result? Plant-based perfection.
But, that’s not all they serve. They’ve got an Asian burger — the Osaka — that is sensational, a variety of bowls filled with super foods, a spinach pasta, burrito and smoothies that will make your head spin. For dessert, they’ve got superfood sweets like a vegan Hostess Cupcaka, Lucuma Chocolate Cake (on special), muffins, cookies, truffles and more.
Set in a gorgeous, intimate space, Panacea also has kombucha on tap and herb-infused mocktails to get you feeling groovy. The restaurant is also home to meet ups that deal with consciousness and more.
