If you loved the vegan eats at Jolly Beans in 2016, you’ll love the eats at Joe Maxx Coffee, even more. Why? Simple. Rishi Stocks, the chef behind the original creations at Jolly Beans, has relocated to Joe Maxx.
This groovy little vegan friendly coffee shop in Las Vegas is tucked into a Strip Mall (next to our favorite sushi joint), is the perfect spot to check out local art thanks to a rotating art exhibit, listen to live music during an open mic or the latest work via a reading from a local author, read one of the kitschy books they’ve got for you, curl up on a couch and have a cuppa, or spread out and work at the large table. Or, you know, stuff your face with vegan versions of coffee shop must-haves.
Let’s start with the rotating baked yumminess Stocks is whipping up to get your tummy growling. For sweets, order the blueberry turnover with a lavender/lemon glaze. Breakfast or lunch, check out the cranberry walnut chick’n pockets that “taste like Thanksgiving dinner” and conjure up all the deliciousness without the tired after. They’ve also got chick’n fajita pocked filled with peppers, onions, sun dried tomatoes, cheese, chick’n, and a house-made sour cream wrapped in a beautiful, flaky crust.
Items that are always on the menu include a garden veggie sandwich with cream cheese, avocado, sun dried tomatoes, cucumber, spinach and lemon pepper salt served on a toasted bagel; a big bagel burger packed with a Gardein patty, cheese, mayo, spinach and avo; and the cranberry walnut chick’n salad with house-made cranberry lemon aioli, cucumbers, toasted walnuts, ayo, cucumbers and spinach (wrap it, wheat bread or salad).
