Welcome to Adi’s Active Nutrition, Las Vegas’s healthiest gluten-free restaurant with vegan options … where sweet potato is Queen. Seriously.
According to owner James Roberts, Adi’s, located in the southwest, was built on the foundation that healthy eating should be guilt-free, available anytime for everybody, without compromising taste. Born from his wife, Adi’s, desire to serve up all-natural, gluten-free, no added fat, no added sugar and low carb eats, this vegan-friendly Las Vegas spot could be one of the city’s hidden gems for healthy vegan dining.
The duo have created a menu that pays homage to the sweet potato. In fact, the carb in all of their eats features the spud somehow (they even have a sweet potato latte that is a must). Using this ingredient, Adi’s Active fuses nutrients and flavor into all of their food.
“Everybody thinks Thanksgiving when they think of the sweet potato,” explains Rogers. “But, sweet potatoes have some of the best carbohydrates and nutrients for your body.”
The menu, which continually evolves with more vegan eats, offers up breakfast and lunch goodies from smoothies (yes, with sweet potatoes in them) to an acai bowl with a choice of toppings (hold the honey to make it vegan) and a creamy oatmeal with three different toppings. They also offer a peanut butter and banana toast served a top a thinly sliced sweet potato instead of the traditional bread.
For lunch, there are plenty of vegan options. Adi’s features three different salads — sweet potato, quinoa and walnuts, Thai peanut with sweet potato noodles or a light summer salad.
They also serve a stuffed sweet potato filled with roasted red pepper, cilantro, onion and vegan cheese, lasagne (hold the meat), quinoa sweet potato balls and a creamy sweet potato soup topped with roasted pumpkin seeds.
The most interesting item on the menu — the portobello mushroom “burger” comes topped with vegan cheese and is served sandwiched between a freshly baked (and piping hot) sweet potato as its bun. While it’s nearly impossible to eat it like so, you can cut it up and enjoy the flavor combo.
Adi’s also offers vegan truffles for dessert, as well as plenty of caffeinated options.
