About Diana

Vegans, Baby founder Diana Edelman is a vegan dining industry expert.

Welcome to a world where being vegan is approachable and accessible! I’m Diana Edelman, the founder of Vegans, Baby and it’s my goal to show you that being vegan doesn’t have to be hard, and that you (yes, you!) can make simple changes to make a better and kinder world.

I’m an award-winning travel curator with international vegan tours named as some of the best in the world. I was a James Beard Awards judge in 2025, have curated culinary experiences at the James Beard House, Climate Week NYC, Life is Beautiful and more. I am a plant-based expert and regular on television — maybe you’ve seen me host The Good Fork on COX. In addition, I work with restaurants to help them add vegan options. When I’m not eating or exploring, I’m writing about my experiences as a solo traveler, entrepreneur and intersectional activist fighting for equity and freedom for all living beings.

Current location: hanging out in the East Village, NYC.

📍NYC 🌱 Award-winning plant-based travel + food curator 🏆 2025 Beard judge 📺 TV host 🌱 Vegan guides, dining intel, travel planner 🗺️ Planning: 🇯🇵

Unpopular opinion: Speaking out for what's right s Unpopular opinion: Speaking out for what's right shouldn't be controversial. THIS IS A LONGER ONE BUT PLS READ THRU. Speaking out against I C E. Speaking out against genocide. Speaking out against white supremacy and racism. Speaking out against fascism and authoritarianism. Protecting our community and helping others, standing in solidarity, should not be controversial.

Last week, I posted in vegan FB groups across the country looking for vegan and vegan friendly businesses who were striking in solidarity with Minnesota, or showing up another way they donations, etc.

Some of the responses I got from the vegan community in those groups were absolutely disgusting. Racist. Hateful. It's shocking and incredibly disappointing to see a movement rooted in liberation and compassion being co-opted with ppl who could care less about humans.

The solution for liberating non-human beings is deeply connected to the liberation of humans. To advocating for equity, fair wages, protections, healthcare, environmental care. That a group who stands up for animals would so callously rage against people and businesses trying to do better and fight for equal rights is embarrassing, shameful and not anything I want to be associated with.

I still have the list of biz across nation who shut down or helped in other ways and will continue to update it if ppl share more. Pls, support these biz bc hate often speaks louder and I saw tons of ppl review bombing in an effort to hurt those who stand for others. They took the brunt of these ppl's rage and as a community, let's remind them they are on the right side of history.

And as a reminder, my content isn't for MAGA or MAGA and any of the beliefs it supports. See yourselves right there F out ✌️

Shout out to the few biz in Las Vegas (my old home) who got into the wrong side of the algo, and to the vegan spots in NYC who stood up. @yukonpizza in LV (pic above) makes incredible pizza 🍕. If you're near them, you won't be sorry to give them your money.

Love you all and keep fighting. The revolution is here.

If that's you, hi, hello, welcome to my world. Please stick around. If that's not you, leave 🚪 . Even if you're vegan. Because vegan is kindness and compassion and against the oppression of all living beings, and we're def living in the opposite of that. If there is hate in you, you're not welcome here.

If you have been silent, it's never too late to use your voice while you still have one. Download and use @5calls . Sign up for groups like @peoplesforumnyc @jvpaction @refusefascism @aclu_nationwide. Sign the general strike card @thegeneralstrikeus and join your local branch. Start getting more involved in local politics. Speak up when you hear someone being racist or hateful. Blow a whistle on ICE. Support immigrant-owned businesses. Ditch Amazon, Target, Home Depot, Spotify, and anyone else supporting ICE, MAGA, Israel. Do one tiny thing today to make the world a better place. I've got you and will continue to share resources on how you can help put an end to the authoritarian world we are living in.

AND, if your goal is to lead with kindness and compassion, stop eating and using animals. None can be free unless all are free.

@nomadteaparlour is described as a "nostalgic throwback to the luxury Cantonese restaurants of New York's past" ( @eater_ny ) and while I'm not familiar with the reference, I can tell you their vegan-friendly options are delicious.

Staff are well-versed in what vegan entails and there are some damn good offerings to enjoy like the scallion pancakes (a must for me, always), dumplings, mapo tofu and a mushroom claypot.

They've also got the most incredible mulled wine here. It's made with tequila, soy milk and sesame oil. It sounds wild, but it's so incredibly flavorful.

A decade of Vegans, Baby 🤯 Got some exciting new A decade of Vegans, Baby 🤯

Got some exciting news the last few slides -- details for all of them on vegansbaby.com main menu or link in bio.

I think it's safe to say 2025 sucked for a good chunk of people. There were times I didn't know how I would get thru, and months that were a blur of grief and hopelessness. But, there was some good like spending time with friends, going to protests, being a Jude for the James Beard Awards and falling in love.

Instead of focusing on the last 365 days, I want to take a big step back and look at the last decade.

Here's the set up:
Mid December, 2015, I had decided to move back to Las Vegas after spending 3 years in Thailand working for an elephant rescue org, months in London writing (I had just signed a book agent to write a memoir about quitting my career to travel the world solo), and a year in Madrid. Over some Lambrusco one evening, Vegans, Baby was born.

The rest is herstory.

Thank you to each and every person who has been here, attended my events, gone on my tours, bought a book, sent me a message, liked me, loved me, loathed me. I am forever grateful for all of you and for the magical, kind, generous, loving friends I've made along the way. To the mentors, chefs, restaurants, foundations, creators, media, who have all been so supportive. This decade would not be what it is without all of you.

Wishing you a healthy and happy 2026. Never stop fighting for all living beings.
