One of the late Chef Kerry Simon’s parting gifts was the opening of Carson Kitchen in Downtown Las Vegas. Focusing on a more social, communal dining experience, Carson Kitchen carries on Simon’s flavorful and creative reputation.
With a menu that changes every few months, it’s hard to gauge what vegan options will appear. However, the kitchen is quite accommodating to vegan modifications on their dishes.
Plus, there is the seriously amazing Rainbow Cauliflower to devour. Garlicky, lemony and perfectly-charred, this is one of our favorite veggie dishes in the Valley. Thankfully, it’s a Carson Kitchen staple and isn’t going anywhere.
